Crab-Stuffed Mushrooms

OOOhhh, Todays Recipe of the Day is a real doozie!  It is pretty close to what you get in the restaurants and they smell positively DIVINE while they’re in the oven!

Recipe of the Day

Crab Stuffed Mushrooms

3/4 Cup Melted butter (divided)

1 Cup crushed seasoned croutons

1 Cup shredded Mozzarella cheese (NOT the cheap stuff)

1 6 oz Can of Crabmeat (drained)

4 large cloves of garlic (Chopped)

1/4 Cup shredded Mozzarella

1 lb Fresh mushrooms, stems removed (the bigger ones are better for this)

Preheat oven to 375 degrees.  Brush a large baking sheet with melted butter.  Arrange Mushroom caps in a single layer over the baking sheet.

In a medium bowl, mix together the crushed croutons, remaining 1/2 cup of butter, 1 cup shredded cheese, crabmeat and garlic.  If the mix looks too dry, try adding a little EVOO (Extra Virgin Olive Oil) to the mix, but not too much. Spoon into mushroom caps where the stems used to be.

Bake for 10 – 12 minutes in the preheated oven, or until lightly browned on the top.  Sprinkle with additional cheese if desired .
