Cracker Experiments

A buddy brought some doctored saltines to work a few days ago.    They had Olive Oil, Red Pepper Flakes and Who-knows-what-else on them.   He didn’t have the recipe, but we did some recipe searching on the internet using the L.A.R. Method (Looks About Right).

I’m doing some experiments as I type.  I’ve got three batches going:

#1:     1 batch with the original recipe

#2:     1 batch w/ original recipe plus cumin, Cayenne, Chilli Powder, sugar

#3:     1 batch w/ #2 recipe plus Liquid Smoke, Worcestershire Sauce, Chipotle Tabasco.

Here’s the Original Recipe

Saltine Snackers

1 (1 lb) box saltine crackers

1 cup Olive Oil

1 (1 ounce) package dry ranch dressing mix
1/4 cup red pepper flakes
2 tablespoons garlic powder
3 tablespoons grated parmesan cheese

In a 2.5 gallon Ziploc bag, place all 4 sleeves of the Saltines.

Blend the oil and remaining ingredients in a small bowl.  Pour this mixture over the Saltines and shake well until the crackers are coated.  Remove the crackers from the bag and place them in single layers on a cookie sheet (this will take several batches).  Bake for 5 minutes at 250 degrees.  Remove from oven and take the crackers from the tray and place them on paper towels to cool.  Cool completely, then place in an airtight container for storage.
