Sauteed Snapper with Soy-Butter Sauce

Todays Recipe of the Day has a Polynesian spin to it. I haven’t tried it yet, but it sounds pretty tasty.

Sauteed Snapper with Soy Butter Sauce

4 Snapper Fillets (about 6 oz each)
salt & pepper to taste
1/4 cup Flour
3 tbsp Vegetable Oil
6 tbsp Unsalted Butter
4 tsp Soy Sauce
1 Clove of Garlic, peeled &minced
Juice from 1/2 Lemon (personally, I’d use a Lime)
Season Snapper Fillets with salt and pepper, then dust in flour.  Heat a saute pan with the oil.  Add Snapper, and saute on both sides until cooked.  Remove fish from pan and set aside.  Discard excess oil, and return to medium-high heat. Melt butter until golden brown, then add Soy Sauce, Garlic, and Lemon (or lime) Juice.  Season with salt and pepper to taste.  Pour sauce over Snapper.
