Blackened Tilapia w/ Lime-Herb Sauce

Blackened Tilapia with Lime-Herb Sauce (original recipe, slightly modified by me, tho)

3 Tbsp Paprika
1 Tbsp Onion Powder
1 Tsp Garlic Powder
1 Tsp ground White Pepper
1 Tsp ground Black Pepper
1 Tsp Cayenne Pepper, or to taste
1 Tsp dried Oregano
1 Tsp dried Thyme
1/2 Tsp Celery Seed
1 Tbsp Sea Salt, or to taste
1 Lb Tilapia Fillets
1 large Lime ( juice of )
1 Cup Vermouth
1/4 Cup (or so)Vegetable Oil

Mix all spices together in a small bowl.  Heat Veggie Oil on Medium heat, to nearly smoking.  Rub spices into Tilapia and put them in the pan to blacken (about 3 minutes each side).  Remove from heat, Add Vermouth and reduce.  Pour Sauce mix remaining in pan over the fish and pour the lime juice over it.

Blackened Tilapia with Lime-Herb Sauce (Shortened Version)
1 LB Tilapia Fillets
1/4 Cup generic Cajun Seasoning
1 Tsp Cayenne Pepper
1/2 Tsp Celery Seed
1 Cup Vermouth
Juice of 1 large Lime
1/4 Cup (or so)Vegetable Oil

Essentially, the same prep instructions as above.
