Beer Battered Shrimp w/Chipotle Dipping Sauce

Today’s Recipe sounds good and I can’t wait to try it!

Beer Battered Shrimp with Chipotle Dipping Sauce

1 Lb Shrimp, peeled

– -Oil for Frying

Sauce

1/2 Cup Soy Sauce

1 Tbsp Chipotle Peppers in Adobo Sauce (liquified, imho)

1Tbsp Ginger, minced

3 Tbsp Lime Juice (FRESH)

1 Tbsp Mirin

Batter:

1 1/2 Cup All Purpose Flour

1/2 Cup Corn Starch (sounds like alot, but okay…)

1 Tbsp Salt

12 Oz Light Beer

Preheat oil to 365 degrees.

In a small bowl, whisk together the Dipping Sauce ingredients and transfer to a serving bowl (cover and set aside)

In a medium bowl, mix the Flour, CornStarch and salt. Slowly mix in the beer until combined. This batter must be used immediately or cover and refridge till later.

Toss Shrimp in the batter and gently shake off excess batter. Fry in hot oil 5-6 minutes or until golden brown.

Serve hot with dipping sauce.
