Bourbon Chicken

Bourbon Chicken

1 tbl butter
2 tbl olive oil
1/2 cup chopped onion
2 clove garlic, finely minced
4 x skinless, boneless chicken breast halves
1/4 cup chicken broth
1/4 cup bourbon whiskey
Salt and freshly ground black pepper to taste

In a large skillet, melt your butter and add Olive Oil.  Saute your onion until soft and then add the garlic for about 30 seconds.  Remove from skillet with a slotted spoon into a bowl.
Add the chicken breast to skillet and brown on both sides. Return your onion mixture to the skillet and add the broth and bourbon, mixing well.
Cover and let simmer for about 20 minutes or until the chicken is tender and the juices run clear.
