Sweet Nam Pla Thai Dipping Sauce

Okay, back to the cooking!

This is a slimmed down version of the Sauce that goes with my “Thai Pork Skewers with Sweet Chili Dipping Sauce” that I will be posting when grilling weather is here.   The smell is a little odd because of the Fish Sauce, but after the flavors mix (especially with the other recipe) this incredibly simple sauce is great with seafood or mixed greens.

Sweet Nam Pla Dipping Sauce

2 tbsp Fish Sauce (available at oriental grocery stores)

4 limes

1 tbsp palm sugar or brown sugar

Grate the zest of 2 limes into a small bowl and then juce all 4 limes into the same bowl.   Whisk in the Fish Sauce (nam pla) and the sugar.  Let sit for a few hours for the flavors to mix.
