Parsi Style Fried Chicken

mmm… Spicy Fried Chicken….. MMMMMMM    Don’t worry though, its not that hot, just a little fiery but with a nice lite crust from the eggs.

Parsi Style Fried Chicken  (from India)

8 chicken thighs or an assortment of chicken peices

1 tbsp minced garlic

1 tbsp minced fresh ginger

2 jalapenos or 4 Thai peppers, stemmed, seeded and minced

1 tbsp cumin seeds

1 tsp ground coriander

Oil (for deep frying)

1 cup flour

4 eggs, beaten

Use a sharp knife to make gashes in the chicken down to the bone on the skin side of the chicken.   combine spices and rub the chicken with mixture.  Wrap in plastic and refrigerate from a couple hours up to a day.

Put about 2 inches of oil in a skillet or large deep saucepan and turn to med-high.  When the oil reaches about 325, a pinch of flour will sizzle.  Then you can begin the frying.

Dredge each peace in the flour, then dip in the egg, then dip in the flour and place gently in the oil.  Be sure not to crowd the peices.   Fry, turning 3-4 times until nicely browned all over which will take about 20 mins.

Make sure the chicken is done by making a small cut in each peice and checking for blood.

Serve and enjoy!
